Ingredients

  • Squid - 200 grams, cleaned and sliced into rings
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1 small, julienned
  • Fresh mint leaves - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Lime - 1, juiced
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, finely chopped (optional)
  • Peanut - 20 grams, crushed (for garnish)

Steps

  1. Bring a pot of water to a boil and blanch the squid rings for 1-2 minutes until opaque. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the blanched squid, julienned carrot, cucumber, and red bell pepper.
  3. In a small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and chopped chili pepper (if using) to create the dressing.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Add the chopped mint and cilantro, mix lightly, and let sit for 5 minutes to allow the flavors to meld.
  6. Serve the salad in bowls, garnished with crushed peanuts on top.
