Ingredients

  • Squid - 200 grams
  • Cucumber - 100 grams, thinly sliced
  • Carrot - 50 grams, julienned
  • Red bell pepper - 50 grams, thinly sliced
  • Fresh cilantro - 10 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Lime juice - 30 ml
  • Fish sauce - 15 ml
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, finely chopped (optional)
  • Sweetener (erythritol or stevia) - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Clean and prepare the squid by removing the head and innards, then rinse under cold water.
  2. Bring a pot of water to a boil, add the squid and cook for 2-3 minutes until opaque and tender. Remove from heat and let cool.
  3. Once cooled, slice the squid into rings and set aside.
  4. In a mixing bowl, combine lime juice, fish sauce, minced garlic, sweetener, and chili pepper (if using) to create the dressing.
  5. Add the sliced squid, cucumber, carrot, red bell pepper, cilantro, and mint to the bowl with the dressing.
  6. Toss gently to combine all ingredients and let it marinate for about 5-10 minutes.
  7. Serve chilled or at room temperature, garnished with additional herbs if desired.
