- Squid - 200 grams
- Cucumber - 100 grams, thinly sliced
- Carrot - 50 grams, julienned
- Red bell pepper - 50 grams, thinly sliced
- Fresh cilantro - 10 grams, chopped
- Fresh mint - 10 grams, chopped
- Lime juice - 30 ml
- Fish sauce - 15 ml
- Garlic - 1 clove, minced
- Chili pepper - 1 small, finely chopped (optional)
- Sweetener (erythritol or stevia) - 1 teaspoon
- Black pepper - to taste
Steps
- Clean and prepare the squid by removing the head and innards, then rinse under cold water.
- Bring a pot of water to a boil, add the squid and cook for 2-3 minutes until opaque and tender. Remove from heat and let cool.
- Once cooled, slice the squid into rings and set aside.
- In a mixing bowl, combine lime juice, fish sauce, minced garlic, sweetener, and chili pepper (if using) to create the dressing.
- Add the sliced squid, cucumber, carrot, red bell pepper, cilantro, and mint to the bowl with the dressing.
- Toss gently to combine all ingredients and let it marinate for about 5-10 minutes.
- Serve chilled or at room temperature, garnished with additional herbs if desired.
