Ingredients

  • Shrimp - 100 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Rice vermicelli - 50 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 small, julienned
  • Fresh mint - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce (Halal) - 1 tablespoon
  • Sugar - 1 teaspoon
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, finely chopped (optional)
  • Peanuts - 20 grams, crushed (for garnish)

Steps

  1. In a pot of boiling water, cook the rice vermicelli for about 3-5 minutes until tender. Drain and rinse under cold water to stop the cooking process.
  2. In a separate pot, bring water to a boil, then add the shrimp and squid. Cook for about 2-3 minutes until the shrimp turn pink and the squid is opaque. Drain and cool.
  3. In a large bowl, combine the cooked shrimp and squid, rice vermicelli, cucumber, carrot, red bell pepper, mint, and cilantro.
  4. In a small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and chopped chili pepper (if using) until the sugar dissolves.
  5. Pour the dressing over the seafood and vegetables, tossing gently to combine. Let it sit for about 5 minutes for the flavors to meld.
  6. Serve the salad in bowls, garnished with crushed peanuts on top.
