Ingredients
- Shrimp - 100 grams, peeled and deveined
- Squid - 100 grams, cleaned and sliced
- Rice vermicelli - 50 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Red bell pepper - 1 small, julienned
- Fresh mint - 10 grams, chopped
- Fresh cilantro - 10 grams, chopped
- Lime juice - 2 tablespoons
- Fish sauce (Halal) - 1 tablespoon
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Chili pepper - 1 small, finely chopped (optional)
- Peanuts - 20 grams, crushed (for garnish)
Steps
- In a pot of boiling water, cook the rice vermicelli for about 3-5 minutes until tender. Drain and rinse under cold water to stop the cooking process.
- In a separate pot, bring water to a boil, then add the shrimp and squid. Cook for about 2-3 minutes until the shrimp turn pink and the squid is opaque. Drain and cool.
- In a large bowl, combine the cooked shrimp and squid, rice vermicelli, cucumber, carrot, red bell pepper, mint, and cilantro.
- In a small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and chopped chili pepper (if using) until the sugar dissolves.
- Pour the dressing over the seafood and vegetables, tossing gently to combine. Let it sit for about 5 minutes for the flavors to meld.
- Serve the salad in bowls, garnished with crushed peanuts on top.
