Steps

  1. Poach the chicken breast in boiling water for about 15-20 minutes, or until cooked through. Remove from water and let cool.
  2. While the chicken is cooling, prepare the vegetables: thinly slice the cabbage, julienne the carrot, and chop the cilantro and mint.
