Ingredients
- Chicken breast - 200 grams
- Cabbage, finely shredded - 150 grams
- Carrot, julienned - 50 grams
- Cucumber, thinly sliced - 50 grams
- Fresh mint leaves - 30 grams
- Fresh coriander (cilantro) - 30 grams
- Lime juice - 30 ml
- Fish sauce - 15 ml
- Olive oil - 15 ml
- Red chili, finely chopped - 1 (optional)
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, bring water to a boil and add the chicken breast. Cook for about 15-20 minutes until the chicken is fully cooked.
- Remove the chicken from the pot and let it cool. Once cooled, shred the chicken into thin strips.
- In a large bowl, combine the shredded cabbage, carrot, cucumber, mint leaves, and coriander.
- In a separate small bowl, whisk together the lime juice, fish sauce, olive oil, chopped chili, salt, and pepper to create the dressing.
- Add the shredded chicken to the vegetable mixture and pour the dressing over the top. Toss everything together until well combined.
- Serve immediately or let it chill in the refrigerator for 10 minutes before serving for enhanced flavors.
