Ingredients

  • Chicken breast - 200 grams
  • Cabbage, finely shredded - 150 grams
  • Carrot, julienned - 50 grams
  • Cucumber, thinly sliced - 50 grams
  • Fresh mint leaves - 30 grams
  • Fresh coriander (cilantro) - 30 grams
  • Lime juice - 30 ml
  • Fish sauce - 15 ml
  • Olive oil - 15 ml
  • Red chili, finely chopped - 1 (optional)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, bring water to a boil and add the chicken breast. Cook for about 15-20 minutes until the chicken is fully cooked.
  2. Remove the chicken from the pot and let it cool. Once cooled, shred the chicken into thin strips.
  3. In a large bowl, combine the shredded cabbage, carrot, cucumber, mint leaves, and coriander.
  4. In a separate small bowl, whisk together the lime juice, fish sauce, olive oil, chopped chili, salt, and pepper to create the dressing.
  5. Add the shredded chicken to the vegetable mixture and pour the dressing over the top. Toss everything together until well combined.
  6. Serve immediately or let it chill in the refrigerator for 10 minutes before serving for enhanced flavors.
