Ingredients

  • Rice paper wrappers - 8 sheets
  • Shrimp - 200 grams, peeled and deveined
  • Pork loin - 150 grams, cooked and sliced thin
  • Rice vermicelli noodles - 100 grams, cooked
  • Lettuce leaves - 4 large leaves, washed and dried
  • Fresh mint leaves - 15 grams, chopped
  • Fresh cilantro - 15 grams, chopped
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Peanut butter - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Water - 1 tablespoon
  • Chili garlic sauce - to taste

Steps

  1. Cook the shrimp in boiling water for about 2-3 minutes until they turn pink and opaque, then drain and set aside.
  2. If not already cooked, boil the pork loin in water until fully cooked, about 15-20 minutes, then slice thinly.
  3. Prepare the rice vermicelli noodles according to package instructions, then drain and rinse under cold water.
  4. In a small bowl, mix peanut butter, soy sauce, lime juice, water, and chili garlic sauce to create the dipping sauce. Adjust seasoning to taste.
  5. Wet a rice paper wrapper in warm water for about 10 seconds until it softens, then lay it flat on a clean surface.
  6. Place a lettuce leaf on the lower third of the wrapper, followed by a small amount of cooked vermicelli noodles, shrimp, pork slices, mint, cilantro, carrot, and cucumber.
  7. Fold the sides of the wrapper inwards over the filling, then roll it up tightly from the bottom to the top to form a neat roll.
  8. Repeat the process with the remaining wrappers and filling ingredients.
  9. Serve the rolls with the peanut dipping sauce on the side.
