- Rice paper wrappers - 8 sheets
- Shrimp - 200 grams, peeled and deveined
- Pork loin - 150 grams, cooked and sliced thin
- Rice vermicelli noodles - 100 grams, cooked
- Lettuce leaves - 4 large leaves, washed and dried
- Fresh mint leaves - 15 grams, chopped
- Fresh cilantro - 15 grams, chopped
- Carrot - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Peanut butter - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Water - 1 tablespoon
- Chili garlic sauce - to taste
Steps
- Cook the shrimp in boiling water for about 2-3 minutes until they turn pink and opaque, then drain and set aside.
- If not already cooked, boil the pork loin in water until fully cooked, about 15-20 minutes, then slice thinly.
- Prepare the rice vermicelli noodles according to package instructions, then drain and rinse under cold water.
- In a small bowl, mix peanut butter, soy sauce, lime juice, water, and chili garlic sauce to create the dipping sauce. Adjust seasoning to taste.
- Wet a rice paper wrapper in warm water for about 10 seconds until it softens, then lay it flat on a clean surface.
- Place a lettuce leaf on the lower third of the wrapper, followed by a small amount of cooked vermicelli noodles, shrimp, pork slices, mint, cilantro, carrot, and cucumber.
- Fold the sides of the wrapper inwards over the filling, then roll it up tightly from the bottom to the top to form a neat roll.
- Repeat the process with the remaining wrappers and filling ingredients.
- Serve the rolls with the peanut dipping sauce on the side.
