  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, julienned
  • Fresh cilantro - 20 grams, chopped
  • Fresh mint - 20 grams, chopped
  • Peanut butter - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili sauce - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Prepare the rice noodles according to package instructions, then rinse under cold water and set aside.
  2. In a bowl, mix peanut butter, soy sauce, lime juice, chili sauce, and sesame oil to create the dipping sauce. Adjust flavors to taste.
  3. Soak each rice paper sheet in warm water for about 10 seconds until they soften, then lay them flat on a clean surface.
  4. On each rice paper, layer a small amount of cooked rice noodles, tofu slices, cucumber, carrot, red bell pepper, cilantro, and mint.
  5. Fold the sides of the rice paper over the fillings, then roll from the bottom up, creating a tight roll. Repeat for all sheets.
  6. Heat olive oil in a non-stick pan over medium heat. Place the rolls seam side down and cook for 2-3 minutes on each side until golden and slightly crispy.
  7. Remove from heat and slice each roll in half. Serve warm with the dipping sauce drizzled on top and a sprinkle of sesame seeds.
