Ingredients

  • Cucumber - 1 large, thinly sliced lengthwise
  • Cooked shrimp - 200 grams, peeled and deveined
  • Cooked chicken breast - 100 grams, shredded
  • Fresh mint leaves - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Lettuce leaves - 4 large, for wrapping
  • Creamy peanut butter - 2 tablespoons (or almond butter for keto)
  • Soy sauce or coconut aminos - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Prepare cucumber sheets by slicing the cucumber lengthwise into thin strips using a vegetable peeler or mandoline.
  2. In a small bowl, mix the creamy peanut butter, soy sauce, lime juice, minced garlic, and chili flakes to create a dipping sauce.
  3. Lay out a lettuce leaf and place a few cucumber strips on top.
  4. Add 3-4 shrimp and a small handful of shredded chicken on top of the cucumber strips.
  5. Sprinkle with chopped mint and cilantro.
  6. Carefully roll the lettuce leaf around the fillings, starting from one end, and secure the roll tightly.
  7. Repeat the process with the remaining ingredients to create additional rolls.
  8. Serve the Gỏi Cuốn Keto with the dipping sauce on the side.
