- Cucumber - 1 large, thinly sliced lengthwise
- Cooked shrimp - 200 grams, peeled and deveined
- Cooked chicken breast - 100 grams, shredded
- Fresh mint leaves - 1/4 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Lettuce leaves - 4 large, for wrapping
- Creamy peanut butter - 2 tablespoons (or almond butter for keto)
- Soy sauce or coconut aminos - 1 tablespoon
- Lime juice - 1 tablespoon
- Garlic - 1 clove, minced
- Chili flakes - 1/2 teaspoon (optional)
Steps
- Prepare cucumber sheets by slicing the cucumber lengthwise into thin strips using a vegetable peeler or mandoline.
- In a small bowl, mix the creamy peanut butter, soy sauce, lime juice, minced garlic, and chili flakes to create a dipping sauce.
- Lay out a lettuce leaf and place a few cucumber strips on top.
- Add 3-4 shrimp and a small handful of shredded chicken on top of the cucumber strips.
- Sprinkle with chopped mint and cilantro.
- Carefully roll the lettuce leaf around the fillings, starting from one end, and secure the roll tightly.
- Repeat the process with the remaining ingredients to create additional rolls.
- Serve the Gỏi Cuốn Keto with the dipping sauce on the side.
