Ingredients

  • Rice paper - 4 sheets
  • Ground chicken or turkey - 250 grams
  • Fresh shrimp - 100 grams, peeled and deveined
  • Lettuce leaves - 4 large
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Fresh mint - 10 leaves
  • Fresh cilantro - 10 sprigs
  • Peanut butter - 2 tablespoons
  • Soy sauce (gluten-free) - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Chili sauce (optional) - 1 teaspoon

Steps

  1. In a bowl, mix ground chicken (or turkey), minced garlic, grated ginger, and 1 tablespoon of soy sauce. Form into two patties.
  2. Heat a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side or until fully cooked. Remove from skillet and set aside.
  3. In the same skillet, add the shrimp and cook for 2-3 minutes until pink and opaque. Remove from heat.
  4. Prepare the dipping sauce by mixing peanut butter, remaining soy sauce, lime juice, and chili sauce (if using) in a small bowl until smooth. Add a bit of water to achieve desired consistency.
  5. Soak one rice paper sheet in warm water for about 10-15 seconds until softened, then lay it flat on a clean surface.
  6. Layer one lettuce leaf, a few julienned cucumber and carrot pieces, a mint leaf, and a cilantro sprig on the rice paper.
  7. Place a cooked chicken patty and a few shrimp on top of the vegetables.
  8. Carefully roll the rice paper from the bottom, folding in the sides as you go, to create a tight wrap. Repeat with the remaining ingredients.
  9. Serve the Gỏi Cuốn Burgers with the peanut dipping sauce on the side.
