Ingredients
- Rice paper wrappers - 4 sheets
- Cooked shrimp - 200 grams, halved lengthwise
- Cooked chicken breast - 100 grams, shredded
- Firm tofu - 100 grams, sliced into strips
- Rice vermicelli noodles - 100 grams, cooked
- Lettuce leaves - 4 large leaves
- Fresh mint leaves - 10 grams
- Fresh cilantro - 10 grams
- Carrot - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Peanut butter - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Water - 2 tablespoons
Steps
- Prepare the rice vermicelli noodles according to package instructions and set aside.
- Fill a shallow dish with warm water and dip one rice paper wrapper in the water for 10-15 seconds until softened.
- Lay the softened rice paper on a clean surface and place a lettuce leaf in the center.
- Add a few shrimp halves, shredded chicken, tofu strips, rice vermicelli, carrot, cucumber, mint, and cilantro on top of the lettuce.
- Fold the sides of the rice paper over the filling, then roll from the bottom up to form a tight roll. Repeat with the remaining wrappers and filling.
- In a small bowl, mix peanut butter, soy sauce, lime juice, and water to create a dipping sauce.
- Serve the fresh spring rolls with the peanut dipping sauce on the side.
