- Rice paper wrappers - 8 sheets
- Rice vermicelli noodles - 100 grams
- Carrot - 1 medium, julienned
- Cucumber - 1 small, julienned
- Red bell pepper - 1 small, julienned
- Fresh mint leaves - 20 grams
- Fresh cilantro - 20 grams
- Lettuce leaves - 4 large leaves
- Soy sauce - 30 ml
- Peanut butter - 2 tablespoons
- Lime juice - 1 tablespoon
- Water - 50 ml
Steps
- Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water.
- Prepare all vegetables by washing and cutting them into thin julienne strips.
- In a small bowl, mix the soy sauce, peanut butter, lime juice, and water to create a dipping sauce.
- Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until soft.
- Place the softened rice paper on a clean surface. Lay 1 lettuce leaf down, followed by a small amount of vermicelli noodles, some carrot, cucumber, red bell pepper, mint, and cilantro.
- Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top to enclose the filling. Repeat with the remaining ingredients.
- Serve the fresh spring rolls with the dipping sauce on the side.
