- Red cabbage - 100 grams, shredded
- Fresh mint leaves - 10 grams, chopped
- Fresh cilantro - 10 grams, chopped
- Lime - 1, juiced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Agave syrup - 1 teaspoon
- Crushed peanuts - 20 grams, for garnish
Steps
- Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water. Set aside.
- In a large bowl, combine the julienned carrot, cucumber, red bell pepper, shredded red cabbage, chopped mint, and cilantro.
- In a small bowl, mix the lime juice, soy sauce, sesame oil, and agave syrup to create the dressing.
