Ingredients

  • Rice vermicelli noodles - 100 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1/2, thinly sliced
  • Red cabbage - 100 grams, shredded
  • Fresh mint leaves - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Lime - 1, juiced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Agave syrup - 1 teaspoon
  • Crushed peanuts - 20 grams, for garnish

Steps

  1. Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water. Set aside.
  2. In a large bowl, combine the julienned carrot, cucumber, red bell pepper, shredded red cabbage, chopped mint, and cilantro.
  3. In a small bowl, mix the lime juice, soy sauce, sesame oil, and agave syrup to create the dressing.
  4. Add the cooled vermicelli noodles to the vegetable mixture and pour the dressing over the salad. Toss gently to combine all ingredients.
