Ingredients

  • Rice vermicelli - 100 grams
  • Chả lụa (Vietnamese pork sausage) - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1 medium, julienned
  • Fresh herbs (mint, cilantro, basil) - 30 grams, chopped
  • Lettuce leaves - 4 large leaves
  • Roasted peanuts - 30 grams, crushed
  • Fish sauce - 30 ml
  • Lime juice - 15 ml
  • Sugar - 5 grams
  • Garlic - 1 clove, minced
  • Chili (optional) - 1 small, sliced

Steps

  1. Soak the rice vermicelli in warm water for about 15 minutes until soft, then drain and set aside.
  2. In a small bowl, combine fish sauce, lime juice, sugar, minced garlic, and sliced chili to create a dressing. Stir well until sugar dissolves.
  3. In a large bowl, combine the soaked vermicelli, sliced chả lụa, julienned carrot, cucumber, red bell pepper, and chopped herbs.
  4. Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
  5. Arrange the lettuce leaves on plates and top with the salad mixture.
  6. Sprinkle crushed roasted peanuts over the salad for added crunch and serve immediately.
