Ingredients

  • Fresh mint leaves - 15 grams, chopped
  • Fresh cilantro - 15 grams, chopped
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Agave syrup - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Chili flakes - 1/2 teaspoon (optional)
  • Roasted peanuts - 30 grams, crushed for garnish

Steps

  1. Prepare the lotus root by slicing it thinly and soaking it in water with a splash of vinegar for about 10 minutes to prevent browning.
  2. While the lotus root is soaking, julienne the carrot, cucumber, and red bell pepper.
  3. In a large bowl, combine the soaked and drained lotus root, carrot, cucumber, red bell pepper, mint, and cilantro.
  4. In a small bowl, whisk together lime juice, soy sauce, agave syrup, sesame oil, and chili flakes until well combined.
  5. Pour the dressing over the salad and toss gently to combine all ingredients.
