Ingredients

  • Sweet corn - 200 grams (fresh or canned)
  • Cucumber - 100 grams (thinly sliced)
  • Red bell pepper - 50 grams (julienned)
  • Carrot - 50 grams (shredded)
  • Fresh cilantro - 10 grams (chopped)
  • Fresh mint - 10 grams (chopped)
  • Lime juice - 30 ml
  • Soy sauce - 15 ml
  • Agave syrup - 5 ml
  • Sesame oil - 10 ml
  • Chili flakes - 1 gram (adjust to taste)
  • Peanuts - 30 grams (crushed, for garnish)

Steps

  1. If using fresh corn, boil the corn for 5-7 minutes until tender, then let it cool and cut the kernels off the cob.
  2. In a large mixing bowl, combine the sweet corn, cucumber, red bell pepper, and shredded carrot.
  3. In a separate small bowl, whisk together the lime juice, soy sauce, agave syrup, sesame oil, and chili flakes to create the dressing.
  4. Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
  5. Add the chopped cilantro and mint to the salad and toss again.
  6. Serve immediately, garnished with crushed peanuts on top.
