Ingredients

  • Rice paper - 4 sheets
  • Cooked shrimp - 100 grams, halved
  • Cooked chicken breast - 100 grams, shredded
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Fresh mint leaves - 20 grams
  • Fresh cilantro - 20 grams
  • Lettuce leaves - 4 large
  • Peanuts - 30 grams, crushed
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Chili sauce - to taste

Steps

  1. Prepare all the ingredients by cooking the shrimp and chicken, then shredding and halving them respectively.
  2. Julienne the carrot and cucumber, and set them aside.
  3. Mix the lime juice, fish sauce, and sugar in a small bowl to create the dressing.
  4. Soak one rice paper sheet in warm water for about 10-15 seconds until it becomes pliable.
  5. Lay the softened rice paper on a clean surface and place a lettuce leaf in the center.
  6. Add a few pieces of shrimp, chicken, carrot, cucumber, and a few mint and cilantro leaves on top of the lettuce.
  7. Sprinkle some crushed peanuts over the fillings and drizzle a little dressing on top.
  8. Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top to form a wrap.
  9. Repeat the process with the remaining rice paper sheets and fillings.
  10. Serve the rolls with extra dressing and chili sauce on the side for dipping.
