Ingredients
- Vermicelli noodles - 100 grams
- Halal chicken breast - 150 grams
- Lettuce leaves - 50 grams
- Carrot - 50 grams
- Cucumber - 50 grams
- Fresh mint leaves - 10 grams
- Fresh cilantro - 10 grams
- Peanuts - 20 grams
- Fish sauce (or soy sauce for vegetarian) - 2 tablespoons
- Lime juice - 1 tablespoon
- Sugar - 1 teaspoon
- Garlic - 1 clove
- Black pepper - to taste
- Vegetable oil - 1 tablespoon
Steps
- Cook the vermicelli noodles according to package instructions, then drain and rinse under cold water.
- In a bowl, mix fish sauce, lime juice, sugar, minced garlic, and black pepper to create the dressing.
- Slice the Halal chicken breast into thin strips and marinate in half of the dressing for 10 minutes.
- Heat vegetable oil in a pan over medium heat and cook the marinated chicken for about 5-7 minutes until fully cooked.
- While the chicken is cooking, julienne the carrot and cucumber, and chop the lettuce into bite-sized pieces.
- In a large serving bowl, combine the cooked vermicelli noodles, lettuce, carrots, cucumbers, mint, and cilantro.
- Add the cooked chicken on top, drizzle with the remaining dressing, and sprinkle crushed peanuts before serving.
