Ingredients

  • Vermicelli noodles - 100 grams
  • Halal chicken breast - 150 grams
  • Lettuce leaves - 50 grams
  • Carrot - 50 grams
  • Cucumber - 50 grams
  • Fresh mint leaves - 10 grams
  • Fresh cilantro - 10 grams
  • Peanuts - 20 grams
  • Fish sauce (or soy sauce for vegetarian) - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Sugar - 1 teaspoon
  • Garlic - 1 clove
  • Black pepper - to taste
  • Vegetable oil - 1 tablespoon

Steps

  1. Cook the vermicelli noodles according to package instructions, then drain and rinse under cold water.
  2. In a bowl, mix fish sauce, lime juice, sugar, minced garlic, and black pepper to create the dressing.
  3. Slice the Halal chicken breast into thin strips and marinate in half of the dressing for 10 minutes.
  4. Heat vegetable oil in a pan over medium heat and cook the marinated chicken for about 5-7 minutes until fully cooked.
  5. While the chicken is cooking, julienne the carrot and cucumber, and chop the lettuce into bite-sized pieces.
  6. In a large serving bowl, combine the cooked vermicelli noodles, lettuce, carrots, cucumbers, mint, and cilantro.
  7. Add the cooked chicken on top, drizzle with the remaining dressing, and sprinkle crushed peanuts before serving.
