- Fish sauce (kosher) - 1 tablespoon
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Carrot - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Red bell pepper - 1/2, julienned
- Fresh mint leaves - 1/4 cup, roughly chopped
- Fresh cilantro - 1/4 cup, roughly chopped
- Chili pepper - 1 small, sliced (optional)
- Peanuts - 2 tablespoons, crushed (for garnish)
Steps
- In a mixing bowl, combine lemon juice, fish sauce, sugar, and minced garlic. Stir until the sugar is dissolved to make the dressing.
- Heat a non-stick skillet over medium-high heat. Add the sliced beef and sauté for about 3-5 minutes until browned and cooked through.
- Remove the skillet from heat and let the beef cool for a few minutes. Then, add it to the bowl with the dressing and mix well.
- In a large mixing bowl, combine the julienned carrot, cucumber, red bell pepper, mint, cilantro, and sliced chili pepper if using.
- Pour the beef and dressing mixture over the vegetables and toss everything together until well coated.
- Serve immediately, garnished with crushed peanuts on top.
