Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Lemongrass - 2 stalks, trimmed and finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Chili flakes - 1/2 teaspoon (optional)
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Lime - 1, cut into wedges

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the chopped lemongrass, minced garlic, grated ginger, fish sauce, soy sauce, black pepper, and chili flakes.
  3. Add the chicken thighs to the marinade and mix well. Let it marinate for at least 15 minutes.
  4. Line a baking dish with parchment paper and place the marinated chicken in a single layer.
  5. Cover the baking dish with aluminum foil to retain moisture and bake in the preheated oven for 25 minutes.
  6. After 25 minutes, remove the foil and bake for an additional 10 minutes to allow the chicken to brown slightly.
  7. Once cooked, remove from the oven and let it rest for a few minutes before slicing.
  8. Garnish with chopped cilantro and serve with lime wedges.
