- Sea salt - 2 tablespoons
- Lemongrass (bruised) - 2 stalks
- Garlic (minced) - 4 cloves
- Ginger (sliced) - 1 inch
- Black pepper (whole) - 1 teaspoon
- Coriander seeds - 1 teaspoon
- Fresh chili (sliced) - 1
- Water - 1 liter
Steps
- Rinse the chicken thoroughly and pat it dry with paper towels.
- In a small bowl, mix the sea salt, minced garlic, sliced ginger, black pepper, and coriander seeds to create a rub.
- Rub the salt mixture all over the chicken, ensuring it gets into the cavity as well.
- Stuff the chicken cavity with bruised lemongrass and slices of fresh chili.
- Place the chicken on a heatproof plate that fits into a steamer basket.
- In a large pot, bring 1 liter of water to a boil, then reduce to a simmer.
- Carefully place the steamer basket with the chicken over the simmering water, cover, and steam for 30-40 minutes until the chicken is cooked through (internal temperature should reach 75°C).
- Remove the chicken from the steamer and let it rest for 5 minutes before carving and serving.
