Ingredients

  • Chicken (whole, about 1 kg) - 1
  • Sea salt - 2 tablespoons
  • Lemongrass (bruised) - 2 stalks
  • Garlic (minced) - 4 cloves
  • Ginger (sliced) - 1 inch
  • Black pepper (whole) - 1 teaspoon
  • Coriander seeds - 1 teaspoon
  • Fresh chili (sliced) - 1
  • Water - 1 liter

Steps

  1. Rinse the chicken thoroughly and pat it dry with paper towels.
  2. In a small bowl, mix the sea salt, minced garlic, sliced ginger, black pepper, and coriander seeds to create a rub.
  3. Rub the salt mixture all over the chicken, ensuring it gets into the cavity as well.
  4. Stuff the chicken cavity with bruised lemongrass and slices of fresh chili.
  5. Place the chicken on a heatproof plate that fits into a steamer basket.
  6. In a large pot, bring 1 liter of water to a boil, then reduce to a simmer.
  7. Carefully place the steamer basket with the chicken over the simmering water, cover, and steam for 30-40 minutes until the chicken is cooked through (internal temperature should reach 75°C).
  8. Remove the chicken from the steamer and let it rest for 5 minutes before carving and serving.
