- Chicken thighs - 400 grams, boneless and skinless
- Fresh ginger - 30 grams, thinly sliced
- Garlic - 4 cloves, minced
- Soy sauce - 30 ml, low sodium
- Fish sauce - 15 ml
- Lime juice - 15 ml
- Coconut oil - 15 grams
- Black pepper - 1/2 teaspoon
- Green onions - 2 stalks, chopped
- Fresh cilantro - 10 grams, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the chicken thighs, ginger, garlic, soy sauce, fish sauce, lime juice, black pepper, and coconut oil. Mix well to coat the chicken evenly.
- Place the marinated chicken in a baking dish and arrange the ginger and garlic slices on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and has a slight golden color.
- Once cooked, remove from the oven and let it rest for a few minutes. Garnish with chopped green onions and cilantro before serving.
