Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Fresh ginger - 30 grams, thinly sliced
  • Garlic - 4 cloves, minced
  • Soy sauce - 30 ml, low sodium
  • Fish sauce - 15 ml
  • Lime juice - 15 ml
  • Coconut oil - 15 grams
  • Black pepper - 1/2 teaspoon
  • Green onions - 2 stalks, chopped
  • Fresh cilantro - 10 grams, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the chicken thighs, ginger, garlic, soy sauce, fish sauce, lime juice, black pepper, and coconut oil. Mix well to coat the chicken evenly.
  3. Place the marinated chicken in a baking dish and arrange the ginger and garlic slices on top.
  4. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  5. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and has a slight golden color.
  6. Once cooked, remove from the oven and let it rest for a few minutes. Garnish with chopped green onions and cilantro before serving.
