Ingredients

  • Soy protein (or tempeh) - 200 grams
  • Lemongrass - 2 stalks, finely chopped
  • Red chili peppers - 2, sliced
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, sliced
  • Bell pepper (red or yellow) - 1, sliced
  • Carrot - 1 medium, julienned
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Fresh coriander - a handful, for garnish
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the soy protein by soaking it in warm water for about 10 minutes, then drain and squeeze out excess water.
  2. In a bowl, mix the drained soy protein with 1 tablespoon of soy sauce, black pepper, and half of the chopped lemongrass. Let it marinate for 10 minutes.
  3. Heat the vegetable oil in a large pan or wok over medium heat. Add the remaining lemongrass, minced garlic, and sliced chili peppers, and sauté for 2 minutes until fragrant.
  4. Add the marinated soy protein to the pan and stir-fry for about 5 minutes, until it starts to brown.
  5. Add the sliced onion, bell pepper, and carrot to the pan. Stir-fry for another 5-7 minutes until the vegetables are tender but still crisp.
  6. Pour in the remaining tablespoon of soy sauce and stir well to combine. Season with salt and pepper to taste.
  7. Remove from heat and garnish with fresh coriander. Serve hot with lime wedges on the side.
