Ingredients

  • Filtered water - 200 ml
  • Rice vinegar - 2 tablespoons (30 ml)
  • Garlic - 2 cloves, minced
  • Fresh chili - 1 small, sliced (adjust to taste)
  • Fresh cilantro - a handful, chopped

Steps

  1. Wash the cucumbers thoroughly and slice them into thin rounds or half-moons.
  2. In a mixing bowl, combine the sliced cucumbers and salt. Toss well and let it sit for about 15 minutes to draw out excess water.
  3. In a separate bowl, mix the filtered water, rice vinegar, minced garlic, and sliced chili to create the brine.
  4. After 15 minutes, rinse the cucumbers under cold water to remove excess salt and drain well.
  5. Place the cucumbers in a clean jar or container and pour the brine over them, ensuring they are fully submerged.
  6. Seal the jar and refrigerate for at least 15 minutes before serving to allow flavors to meld.
  7. Before serving, sprinkle chopped cilantro over the pickled cucumbers for added freshness.
