- Cooked chicken breast, shredded - 150 grams
- Coconut milk - 100 ml
- Red curry paste - 2 tablespoons
- Mozzarella cheese, shredded - 100 grams
- Bell pepper, sliced - 50 grams
- Red onion, thinly sliced - 50 grams
- Fresh cilantro, chopped - 2 tablespoons
- Lime juice - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- In a mixing bowl, combine shredded chicken, coconut milk, red curry paste, salt, and pepper. Mix until the chicken is well-coated.
- Roll out the pizza dough on a lightly floured surface to your desired thickness.
- Transfer the rolled-out dough onto a baking sheet lined with parchment paper.
- Spread the coconut curry chicken mixture evenly over the pizza dough.
- Sprinkle the shredded mozzarella cheese over the top of the chicken mixture.
- Arrange the sliced bell pepper and red onion on top of the cheese.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
- Remove from the oven and drizzle with lime juice, then sprinkle fresh cilantro on top.
- Slice and serve hot.
