Ingredients

  • Pizza dough - 200 grams
  • Cooked chicken breast, shredded - 150 grams
  • Coconut milk - 100 ml
  • Red curry paste - 2 tablespoons
  • Mozzarella cheese, shredded - 100 grams
  • Bell pepper, sliced - 50 grams
  • Red onion, thinly sliced - 50 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine shredded chicken, coconut milk, red curry paste, salt, and pepper. Mix until the chicken is well-coated.
  3. Roll out the pizza dough on a lightly floured surface to your desired thickness.
  4. Transfer the rolled-out dough onto a baking sheet lined with parchment paper.
  5. Spread the coconut curry chicken mixture evenly over the pizza dough.
  6. Sprinkle the shredded mozzarella cheese over the top of the chicken mixture.
  7. Arrange the sliced bell pepper and red onion on top of the cheese.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  9. Remove from the oven and drizzle with lime juice, then sprinkle fresh cilantro on top.
