Ingredients

  • Broken rice - 1 cup (200g)
  • Kosher chicken breast - 200g
  • Soy sauce (kosher) - 2 tablespoons (30ml)
  • Garlic, minced - 2 cloves
  • Shallots, thinly sliced - 1 medium
  • Vegetable oil - 1 tablespoon (15ml)
  • Cucumber, sliced - 1/2 medium
  • Carrot, shredded - 1 medium
  • Fresh cilantro - 1/4 cup (15g)
  • Pickled daikon radish - 1/4 cup (40g)
  • Chili sauce - to taste

Steps

  1. Rinse the broken rice under cold water until the water runs clear, then soak it for 30 minutes.
  2. While the rice is soaking, marinate the chicken breast in soy sauce, minced garlic, and a tablespoon of vegetable oil for at least 15 minutes.
  3. In a pot, bring 2 cups of water to a boil. Drain the soaked rice and add it to the boiling water. Reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and the water is absorbed.
  4. In a skillet, heat the remaining vegetable oil over medium-high heat. Add the marinated chicken and cook for 5-7 minutes on each side or until fully cooked and golden brown.
  5. Once the chicken is cooked, let it rest for a few minutes before slicing it thinly.
  6. To serve, place a portion of rice on each plate, top with sliced chicken, cucumber, shredded carrot, pickled daikon, and fresh cilantro. Drizzle with chili sauce to taste.
