Ingredients
- Chicken thighs - 300 grams
- Water - 600 ml
- Salt - 1 teaspoon
- Ginger - 1 piece (5 cm, sliced)
- Garlic - 2 cloves (smashed)
- Shallots - 1 (sliced)
- Jasmine rice - 150 grams
- Vegetable oil - 1 tablespoon
- Cucumber - 1 (sliced for garnish)
- Cilantro - a handful (for garnish)
- Soy sauce - 2 tablespoons (kosher)
- Lime - 1 (cut into wedges)
- Chili - 1 (sliced, optional)
Steps
- In a pot, combine the chicken thighs, water, salt, ginger, garlic, and shallots. Bring to a boil, then reduce heat and simmer for about 30 minutes until the chicken is cooked through.
- Remove the chicken from the pot, reserving the broth. Let the chicken cool slightly before shredding it into bite-sized pieces.
- In a separate pot, rinse the jasmine rice under cold water until the water runs clear. Add 300 ml of the reserved broth to the rice and cook according to package instructions (usually about 15-20 minutes).
- Once the rice is cooked, fluff it with a fork and stir in the vegetable oil to add richness.
- To serve, place a portion of the rice on each plate, top with shredded chicken, and garnish with cucumber slices, cilantro, and lime wedges. Serve with soy sauce and sliced chili on the side for dipping.
