Ingredients
- Jasmine rice - 1 cup
- Water - 2 cups
- Boneless chicken thighs - 300 grams
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Ginger - 1 inch, grated
- Soy sauce - 2 tablespoons (kosher)
- Sesame oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - 1/4 cup, chopped
- Green onions - 2, sliced
- Cucumber - 1/2, sliced (for garnish)
- Lime - 1, cut into wedges (for serving)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, combine the soaked rice and 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until the rice is fluffy and water is absorbed.
- While the rice is cooking, heat sesame oil in a skillet over medium heat. Add the minced garlic, chopped shallots, and grated ginger, sautéing until fragrant, about 2-3 minutes.
- Add the boneless chicken thighs to the skillet and season with soy sauce, salt, and black pepper. Cook for 5-7 minutes on each side, until the chicken is cooked through and browned.
- Remove the chicken from the skillet, let it rest for a few minutes, then slice it into strips.
- Fluff the cooked rice with a fork and serve it on plates topped with sliced chicken, cilantro, and green onions. Garnish with cucumber slices and lime wedges.
