Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, combine the soaked rice and 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until the rice is fluffy and water is absorbed.
  3. While the rice is cooking, heat sesame oil in a skillet over medium heat. Add the minced garlic, chopped shallots, and grated ginger, sautéing until fragrant, about 2-3 minutes.
  4. Add the boneless chicken thighs to the skillet and season with soy sauce, salt, and black pepper. Cook for 5-7 minutes on each side, until the chicken is cooked through and browned.
  5. Remove the chicken from the skillet, let it rest for a few minutes, then slice it into strips.
  6. Fluff the cooked rice with a fork and serve it on plates topped with sliced chicken, cilantro, and green onions. Garnish with cucumber slices and lime wedges.
