Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 milliliters
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Red bell pepper - 1, diced
  • Green onion - 2, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce (kosher) - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, combine the soaked rice and 300ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  3. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add the diced carrot, zucchini, and red bell pepper to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
  5. Stir in the soy sauce, salt, and black pepper. Cook for an additional 2 minutes, allowing the flavors to meld.
  6. Once the rice is done, fluff it with a fork and divide it between two plates.
  7. Top the rice with the sautéed vegetable mixture and sprinkle with fresh cilantro and sliced green onions before serving.
