- Mushrooms (shiitake or button) - 100 grams, sliced
- Carrot - 1 medium, julienned
- Daikon radish - 50 grams, julienned
- Green onions - 2, chopped
- Fresh cilantro - 10 grams, chopped
- Lime - 1, juiced
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the rice vermicelli noodles according to package instructions. Drain and set aside.
- In a large pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the sliced mushrooms, julienned carrot, and daikon radish to the pot, cooking for another 3-4 minutes until slightly softened.
- Pour in the vegetable broth and bring to a gentle boil.
- Add the soy sauce, salt, and pepper to taste, and let the soup simmer for about 10 minutes.
- Stir in the cooked rice vermicelli noodles and let them warm through for 2 minutes.
- Remove from heat and add the lime juice, chopped green onions, and fresh cilantro.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
