- Raw shrimp, peeled and deveined - 250 grams
- Garlic, minced - 2 cloves
- Shallots, minced - 1 small
- Sugar - 1 teaspoon
- Fish sauce (kosher) - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Egg white - 1
- Tapioca starch - 2 tablespoons
- Rice paper sheets - 4
- Lettuce leaves - 4
- Fresh herbs (mint, cilantro) - 1/2 cup
- Peanut sauce (kosher) - for dipping
Steps
- In a food processor, combine the shrimp, garlic, shallots, sugar, fish sauce, black pepper, and egg white. Blend until smooth.
- Add the tapioca starch to the shrimp mixture and pulse until well combined.
- Wet your hands and take a portion of the shrimp mixture, shaping it into a cylindrical form around a skewer.
- Repeat this process until all the shrimp mixture is used up, then place the skewers on a plate.
- In a non-stick skillet over medium heat, add a little oil and cook the skewers for about 4-5 minutes on each side until they turn golden brown and are cooked through.
- While cooking the skewers, soak the rice paper sheets in warm water until soft, about 10 seconds, then lay them flat on a clean surface.
- To serve, place a lettuce leaf and some fresh herbs on each rice paper sheet, add a shrimp skewer, and roll tightly, wrapping it like a burrito.
- Serve with peanut sauce for dipping.
