Ingredients

  • Raw shrimp, peeled and deveined - 250 grams
  • Garlic, minced - 2 cloves
  • Shallots, minced - 1 small
  • Sugar - 1 teaspoon
  • Fish sauce (kosher) - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Egg white - 1
  • Tapioca starch - 2 tablespoons
  • Rice paper sheets - 4
  • Lettuce leaves - 4
  • Fresh herbs (mint, cilantro) - 1/2 cup
  • Peanut sauce (kosher) - for dipping

Steps

  1. In a food processor, combine the shrimp, garlic, shallots, sugar, fish sauce, black pepper, and egg white. Blend until smooth.
  2. Add the tapioca starch to the shrimp mixture and pulse until well combined.
  3. Wet your hands and take a portion of the shrimp mixture, shaping it into a cylindrical form around a skewer.
  4. Repeat this process until all the shrimp mixture is used up, then place the skewers on a plate.
  5. In a non-stick skillet over medium heat, add a little oil and cook the skewers for about 4-5 minutes on each side until they turn golden brown and are cooked through.
  6. While cooking the skewers, soak the rice paper sheets in warm water until soft, about 10 seconds, then lay them flat on a clean surface.
  7. To serve, place a lettuce leaf and some fresh herbs on each rice paper sheet, add a shrimp skewer, and roll tightly, wrapping it like a burrito.
  8. Serve with peanut sauce for dipping.
