Ingredients
- Ripe mango - 1 large (about 250g)
- Coconut milk - 200 ml
- Tapioca pearls - 50 g
- Water - 500 ml
- Sugar - 2 tablespoons (30 g)
- Salt - a pinch
- Ice cubes - as needed
Steps
- Start by soaking the tapioca pearls in cold water for about 15 minutes.
- In a saucepan, bring 500 ml of water to a boil, then add the soaked tapioca pearls and cook for about 15 minutes, stirring occasionally until they become translucent.
- Once cooked, drain the tapioca pearls and rinse them under cold water to stop the cooking process. Set aside.
- Peel and dice the ripe mango into small cubes, reserving a few pieces for garnish.
- In a bowl, mix the coconut milk, sugar, and a pinch of salt until the sugar dissolves completely.
- In serving bowls, add a layer of cooked tapioca pearls, followed by the diced mango. Pour the sweetened coconut milk over the top.
- Garnish with reserved mango pieces and add ice cubes if desired. Serve immediately and enjoy your Chè Xoài!
