Steps
- Rinse the mung beans under cold water until the water runs clear. Soak them in water for at least 2 hours or overnight for better texture.
- Drain the soaked mung beans and place them in a pot with 500 milliliters of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until the beans are soft.
- Add the sugar and salt to the mung beans, stirring until dissolved. If using, add the knotted pandan leaves for extra fragrance and simmer for an additional 5 minutes.
- Remove the pandan leaves and mash the mung beans gently with a fork or potato masher, leaving some whole for texture.
