  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Pandan leaves (optional) - 1 piece, tied in a knot
  • Ice cubes - as needed

Steps

  1. Rinse the mung beans under cold water until the water runs clear. Soak them in water for at least 2 hours or overnight for better texture.
  2. Drain the soaked mung beans and place them in a pot with 500 milliliters of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until the beans are soft.
  3. Add the sugar and salt to the mung beans, stirring until dissolved. If using, add the knotted pandan leaves for extra fragrance and simmer for an additional 5 minutes.
  4. Remove the pandan leaves and mash the mung beans gently with a fork or potato masher, leaving some whole for texture.
  5. In a separate saucepan, heat the coconut milk over low heat until warm. Stir in a pinch of salt for flavor.
