Ingredients
- Dried soybeans - 100 grams
- Coconut milk - 400 milliliters
- Water - 600 milliliters
- Pandan leaves - 2 leaves (tied in a knot)
- Sugar - 50 grams (adjust to taste)
- Salt - a pinch
- Ice cubes - for serving (optional)
Steps
- Rinse the dried soybeans under cold water and soak them in a bowl with enough water to cover them for at least 4 hours or overnight.
- After soaking, drain the soybeans and rinse again. Place them in a pot with 600 milliliters of fresh water and bring to a boil.
- Reduce heat to low and simmer the soybeans for about 30 minutes until they are tender, stirring occasionally.
- Once cooked, drain the soybeans and set aside. In the same pot, combine the coconut milk, pandan leaves, and sugar, stirring until the sugar dissolves.
- Add the cooked soybeans back to the pot and return to medium heat. Allow to simmer for an additional 10 minutes to absorb the flavors.
- Remove the pandan leaves and add a pinch of salt to enhance the flavors. Stir well.
- Serve warm or chilled, over ice cubes if desired.
