Ingredients

  • Dried soybeans - 100 grams
  • Coconut milk - 400 milliliters
  • Water - 600 milliliters
  • Pandan leaves - 2 leaves (tied in a knot)
  • Sugar - 50 grams (adjust to taste)
  • Salt - a pinch
  • Ice cubes - for serving (optional)

Steps

  1. Rinse the dried soybeans under cold water and soak them in a bowl with enough water to cover them for at least 4 hours or overnight.
  2. After soaking, drain the soybeans and rinse again. Place them in a pot with 600 milliliters of fresh water and bring to a boil.
  3. Reduce heat to low and simmer the soybeans for about 30 minutes until they are tender, stirring occasionally.
  4. Once cooked, drain the soybeans and set aside. In the same pot, combine the coconut milk, pandan leaves, and sugar, stirring until the sugar dissolves.
  5. Add the cooked soybeans back to the pot and return to medium heat. Allow to simmer for an additional 10 minutes to absorb the flavors.
  6. Remove the pandan leaves and add a pinch of salt to enhance the flavors. Stir well.
  7. Serve warm or chilled, over ice cubes if desired.
