Ingredients

  • Silken tofu - 200 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Pandan leaves - 2 leaves, tied in a knot
  • Salt - a pinch
  • Tapioca pearls - 50 grams
  • Mung beans (peeled) - 50 grams
  • Crushed ice - as needed

Steps

  1. Prepare the mung beans by soaking them in water for at least 2 hours, then steam them until soft, about 20 minutes.
  2. In a pot, bring water to a boil and add the tapioca pearls. Cook for about 10 minutes until they become transparent. Drain and rinse under cold water.
  3. In another saucepan, combine coconut milk, sugar, pandan leaves, and a pinch of salt. Heat gently over low heat until the sugar dissolves, then remove the pandan leaves.
  4. Cut the silken tofu into small cubes and gently warm them in the coconut milk mixture for about 2-3 minutes.
  5. To serve, place a few cubes of warm tofu in a bowl, add a scoop of mung beans and tapioca pearls, and pour the sweet coconut milk over the top.
  6. Top with crushed ice and enjoy your Chè Đậu Hũ!
