Ingredients
- Silken tofu - 200 grams
- Coconut milk - 200 ml
- Sugar - 50 grams
- Pandan leaves - 2 leaves, tied in a knot
- Salt - a pinch
- Tapioca pearls - 50 grams
- Mung beans (peeled) - 50 grams
- Crushed ice - as needed
Steps
- Prepare the mung beans by soaking them in water for at least 2 hours, then steam them until soft, about 20 minutes.
- In a pot, bring water to a boil and add the tapioca pearls. Cook for about 10 minutes until they become transparent. Drain and rinse under cold water.
- In another saucepan, combine coconut milk, sugar, pandan leaves, and a pinch of salt. Heat gently over low heat until the sugar dissolves, then remove the pandan leaves.
- Cut the silken tofu into small cubes and gently warm them in the coconut milk mixture for about 2-3 minutes.
- To serve, place a few cubes of warm tofu in a bowl, add a scoop of mung beans and tapioca pearls, and pour the sweet coconut milk over the top.
- Top with crushed ice and enjoy your Chè Đậu Hũ!
