- Coconut milk - 200 ml
- Sugar - 50 g
- Salt - 1/4 tsp
- Tapioca pearls - 30 g
- Water - 500 ml
- Mango - 1 medium, diced
- Banana - 1 medium, sliced
- Pineapple - 100 g, diced
- Lychee - 100 g, peeled and pitted
- Ice cubes - as needed
Steps
- In a saucepan, bring 500 ml of water to a boil, then add the tapioca pearls. Cook for about 15 minutes, stirring occasionally until they become translucent.
- Once cooked, remove from heat, drain, and rinse the tapioca pearls under cold water. Set aside.
- In another saucepan, combine coconut milk, sugar, and salt. Heat over low heat, stirring until the sugar is dissolved. Do not boil.
- In serving bowls, layer the cooked tapioca pearls with the diced mango, sliced banana, diced pineapple, and lychee.
- Pour the warm coconut milk mixture over the fruit and tapioca layers.
- Add ice cubes if desired for a chilled dessert, and serve immediately.
