Ingredients
- Mung beans - 100 grams
- Coconut milk - 200 ml
- Water - 500 ml
- Jaggery or palm sugar - 50 grams
- Roasted peanuts - 30 grams
- Salt - a pinch
- Vanilla extract - 1 teaspoon
Steps
- Rinse the mung beans under cold water until the water runs clear, then soak them in water for at least 2 hours or overnight.
- After soaking, drain the mung beans and place them in a saucepan with 500 ml of water. Bring to a boil, then reduce to a simmer and cook for about 20 minutes until the beans are soft.
- Once cooked, drain any excess water, then mash the mung beans slightly with a fork or a potato masher. Stir in the jaggery or palm sugar and a pinch of salt until dissolved.
- In a separate saucepan, combine the coconut milk, vanilla extract, and a pinch of salt. Heat gently over low heat until warm, but do not bring it to a boil.
- Divide the mashed mung beans into two serving bowls, then pour the warm coconut milk over the top.
- Sprinkle the roasted peanuts on top for added crunch and texture, and serve warm or chilled.
