Ingredients

  • Mung beans - 100 grams
  • Coconut milk - 200 ml
  • Water - 500 ml
  • Jaggery or palm sugar - 50 grams
  • Roasted peanuts - 30 grams
  • Salt - a pinch
  • Vanilla extract - 1 teaspoon

Steps

  1. Rinse the mung beans under cold water until the water runs clear, then soak them in water for at least 2 hours or overnight.
  2. After soaking, drain the mung beans and place them in a saucepan with 500 ml of water. Bring to a boil, then reduce to a simmer and cook for about 20 minutes until the beans are soft.
  3. Once cooked, drain any excess water, then mash the mung beans slightly with a fork or a potato masher. Stir in the jaggery or palm sugar and a pinch of salt until dissolved.
  4. In a separate saucepan, combine the coconut milk, vanilla extract, and a pinch of salt. Heat gently over low heat until warm, but do not bring it to a boil.
  5. Divide the mashed mung beans into two serving bowls, then pour the warm coconut milk over the top.
  6. Sprinkle the roasted peanuts on top for added crunch and texture, and serve warm or chilled.
