  • Coconut milk - 200 ml
  • Mango - 1 medium, diced
  • Jackfruit - 100 grams, diced
  • Lychee - 100 grams, peeled and pitted
  • Pineapple - 100 grams, diced
  • Sugar - 2 tablespoons
  • Salt - a pinch

Steps

  1. In a pot, bring 500 ml of water to a boil. Add the tapioca pearls and cook on medium heat for about 15 minutes, stirring occasionally until they become translucent.
  2. Once cooked, drain the tapioca pearls and rinse them under cold water to stop the cooking process. Set aside.
  3. In a separate bowl, combine the diced mango, jackfruit, lychee, and pineapple. Mix gently to combine.
  4. In a saucepan over low heat, combine the coconut milk, sugar, and a pinch of salt. Stir until the sugar is fully dissolved, then remove from heat.
  5. To serve, place a layer of the fruit mixture in a bowl, add a scoop of the cooked tapioca pearls on top, and pour the warm coconut milk over everything.
  6. Add ice cubes if desired for a chilled version, and enjoy your Chè Thái!
