Ingredients
- Tapioca pearls - 50 grams
- Coconut milk - 200 ml
- Mango - 1 medium, diced
- Jackfruit - 100 grams, diced
- Lychee - 100 grams, peeled and pitted
- Pineapple - 100 grams, diced
- Sugar - 2 tablespoons
- Salt - a pinch
- Ice cubes - as needed
Steps
- In a pot, bring 500 ml of water to a boil. Add the tapioca pearls and cook on medium heat for about 15 minutes, stirring occasionally until they become translucent.
- Once cooked, drain the tapioca pearls and rinse them under cold water to stop the cooking process. Set aside.
- In a separate bowl, combine the diced mango, jackfruit, lychee, and pineapple. Mix gently to combine.
- In a saucepan over low heat, combine the coconut milk, sugar, and a pinch of salt. Stir until the sugar is fully dissolved, then remove from heat.
- To serve, place a layer of the fruit mixture in a bowl, add a scoop of the cooked tapioca pearls on top, and pour the warm coconut milk over everything.
- Add ice cubes if desired for a chilled version, and enjoy your Chè Thái!
