Steps
- In a food processor, combine the shrimp, pork fat, garlic, shallots, fish sauce, black pepper, sugar, cornstarch, and egg white. Blend until the mixture is smooth and sticky.
- Transfer the shrimp mixture to a bowl and refrigerate for about 10 minutes to firm up.
- Prepare a steamer by boiling water in a pot. Line a shallow plate or steaming dish with parchment paper.
- Spoon the shrimp mixture onto the parchment-lined plate, shaping them into small patties, about 5 cm wide.
- Carefully place the plate in the steamer and cover. Steam for about 15-20 minutes until the patties are cooked through and firm to the touch.
- Remove the plate from the steamer and let the patties cool slightly before serving.
