  • Cornstarch - 1 tablespoon
  • Egg white - 1 large
  • Fresh herbs (e.g., cilantro, mint) - for garnish
  • Lettuce leaves - for serving
  • Dipping sauce (e.g., nước chấm) - for serving

Steps

  1. In a food processor, combine the shrimp, pork fat, garlic, shallots, fish sauce, black pepper, sugar, cornstarch, and egg white. Blend until the mixture is smooth and sticky.
  2. Transfer the shrimp mixture to a bowl and refrigerate for about 10 minutes to firm up.
  3. Prepare a steamer by boiling water in a pot. Line a shallow plate or steaming dish with parchment paper.
  4. Spoon the shrimp mixture onto the parchment-lined plate, shaping them into small patties, about 5 cm wide.
  5. Carefully place the plate in the steamer and cover. Steam for about 15-20 minutes until the patties are cooked through and firm to the touch.
  6. Remove the plate from the steamer and let the patties cool slightly before serving.
  7. Serve the Chả Tôm Hấp with fresh lettuce leaves, herbs, and your choice of dipping sauce.
