- Egg white - 1 large
- Garlic, minced - 1 clove
- Shallots, finely chopped - 2 tablespoons
- Fish sauce - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Cornstarch - 1 tablespoon
- Fresh cilantro, chopped - 2 tablespoons
- Lettuce leaves - for serving
- Lime wedges - for serving
Steps
- In a food processor, combine the raw shrimp, egg white, minced garlic, chopped shallots, fish sauce, black pepper, and cornstarch. Process until the mixture is smooth but still has some texture.
- Transfer the shrimp mixture into a bowl and fold in the chopped cilantro until evenly distributed.
- With wet hands, form small patties (about 5 cm in diameter) from the shrimp mixture.
- Heat a non-stick skillet over medium heat and add a small amount of oil. Once hot, place the shrimp patties in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
- Remove the cooked shrimp cakes from the skillet and place them on paper towels to absorb excess oil.
- Serve the Chả Tôm warm on a bed of lettuce leaves with lime wedges on the side.
