Ingredients

  • Raw shrimp, peeled and deveined - 200 grams
  • Egg white - 1 large
  • Garlic, minced - 1 clove
  • Shallots, finely chopped - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Cornstarch - 1 tablespoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Lettuce leaves - for serving
  • Lime wedges - for serving

Steps

  1. In a food processor, combine the raw shrimp, egg white, minced garlic, chopped shallots, fish sauce, black pepper, and cornstarch. Process until the mixture is smooth but still has some texture.
  2. Transfer the shrimp mixture into a bowl and fold in the chopped cilantro until evenly distributed.
  3. With wet hands, form small patties (about 5 cm in diameter) from the shrimp mixture.
  4. Heat a non-stick skillet over medium heat and add a small amount of oil. Once hot, place the shrimp patties in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
  5. Remove the cooked shrimp cakes from the skillet and place them on paper towels to absorb excess oil.
  6. Serve the Chả Tôm warm on a bed of lettuce leaves with lime wedges on the side.
