Ingredients
- Ripe durian flesh - 200 grams
- Coconut milk - 200 ml
- Cooked mung beans - 100 grams
- Sugar - 50 grams
- Water - 300 ml
- Salt - a pinch
- Ice cubes - optional, for serving
Steps
- Begin by rinsing the mung beans under cold water and then cook them in 300 ml of water over medium heat for about 20 minutes until soft.
- Once the mung beans are cooked, drain any excess water and add them back to the pot along with 50 grams of sugar, a pinch of salt, and 200 ml of coconut milk.
- Stir the mixture gently over low heat for another 5 minutes until the sugar dissolves and the mixture is well combined.
- Remove from heat and let it cool slightly before adding the ripe durian flesh, mashing it gently into the mixture until well incorporated.
- Serve the Chè Sầu Riêng warm or chilled in bowls, adding ice cubes if desired.
