Ingredients

  • Jasmine rice - 100 grams
  • Water - 800 milliliters
  • Shrimp (peeled and deveined) - 150 grams
  • Ginger (sliced) - 10 grams
  • Garlic (minced) - 2 cloves
  • Fish sauce (Halal) - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spring onions (sliced) - 2 tablespoons
  • Cilantro (chopped) - 2 tablespoons
  • Lime (cut into wedges) - 1 piece
  • Sesame oil - 1 teaspoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, stirring occasionally until the rice breaks down and the mixture becomes porridge-like.
  4. In a separate pan, heat sesame oil over medium heat. Add the minced garlic and sliced ginger, sautéing until fragrant.
  5. Add the shrimp to the pan, cooking until they turn pink, about 3-4 minutes. Season with fish sauce, salt, and black pepper.
  6. Once the rice is ready, stir in the cooked shrimp and half of the sliced spring onions and cilantro. Mix well and adjust seasoning to taste.
  7. Serve the cháo hot, garnished with the remaining spring onions and cilantro, alongside lime wedges.
