Ingredients
- Jasmine rice - 100 grams
- Water - 800 milliliters
- Shrimp (peeled and deveined) - 150 grams
- Ginger (sliced) - 10 grams
- Garlic (minced) - 2 cloves
- Fish sauce (Halal) - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spring onions (sliced) - 2 tablespoons
- Cilantro (chopped) - 2 tablespoons
- Lime (cut into wedges) - 1 piece
- Sesame oil - 1 teaspoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a pot, combine the rinsed rice and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, stirring occasionally until the rice breaks down and the mixture becomes porridge-like.
- In a separate pan, heat sesame oil over medium heat. Add the minced garlic and sliced ginger, sautéing until fragrant.
- Add the shrimp to the pan, cooking until they turn pink, about 3-4 minutes. Season with fish sauce, salt, and black pepper.
- Once the rice is ready, stir in the cooked shrimp and half of the sliced spring onions and cilantro. Mix well and adjust seasoning to taste.
- Serve the cháo hot, garnished with the remaining spring onions and cilantro, alongside lime wedges.
