- Pork ribs - 300 grams
- Cauliflower rice - 200 grams
- Chicken broth - 4 cups (960 mL)
- Ginger - 1 thumb-sized piece, sliced
- Garlic - 3 cloves, minced
- Fish sauce - 1 tablespoon
- Green onions - 2 stalks, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Lime wedges - for serving
Steps
- In a large pot, combine the pork ribs, chicken broth, sliced ginger, minced garlic, and fish sauce. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and simmer for about 30 minutes, skimming off any foam that rises to the top.
- After 30 minutes, remove the pork ribs from the pot and let them cool slightly. Shred the meat from the bones and set aside.
- Add the cauliflower rice to the broth and simmer for an additional 10 minutes until tender.
- Return the shredded pork to the pot, stirring to combine. Season with salt and black pepper to taste.
- Serve hot, garnished with chopped green onions and cilantro, alongside lime wedges for squeezing.
