Ingredients

  • Pork ribs - 300 grams
  • Cauliflower rice - 200 grams
  • Chicken broth - 4 cups (960 mL)
  • Ginger - 1 thumb-sized piece, sliced
  • Garlic - 3 cloves, minced
  • Fish sauce - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Lime wedges - for serving

Steps

  1. In a large pot, combine the pork ribs, chicken broth, sliced ginger, minced garlic, and fish sauce. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and simmer for about 30 minutes, skimming off any foam that rises to the top.
  3. After 30 minutes, remove the pork ribs from the pot and let them cool slightly. Shred the meat from the bones and set aside.
  4. Add the cauliflower rice to the broth and simmer for an additional 10 minutes until tender.
  5. Return the shredded pork to the pot, stirring to combine. Season with salt and black pepper to taste.
  6. Serve hot, garnished with chopped green onions and cilantro, alongside lime wedges for squeezing.
