Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, bring 1.5 liters of water to a boil. Add the sliced ginger and minced garlic.
- Add the soaked rice to the pot and reduce the heat to a simmer. Cook for about 20-25 minutes, stirring occasionally, until the rice is soft and the mixture resembles a porridge.
- Meanwhile, clean the clams thoroughly under cold water to remove any sand or grit.
- Once the rice is cooked, add the clams to the pot and cook for an additional 5-7 minutes, or until the clams have opened.
- Stir in the fish sauce and black pepper, adjusting to taste.
- Remove from heat and ladle the porridge into bowls. Top with chopped spring onions and cilantro.
- Serve hot with lime wedges on the side for squeezing over the porridge.
