  • Fish sauce - 1 tablespoon
  • Black pepper - to taste

  • Lime - 1, cut into wedges

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, bring 1.5 liters of water to a boil. Add the sliced ginger and minced garlic.
  3. Add the soaked rice to the pot and reduce the heat to a simmer. Cook for about 20-25 minutes, stirring occasionally, until the rice is soft and the mixture resembles a porridge.
  4. Meanwhile, clean the clams thoroughly under cold water to remove any sand or grit.
  5. Once the rice is cooked, add the clams to the pot and cook for an additional 5-7 minutes, or until the clams have opened.
  6. Stir in the fish sauce and black pepper, adjusting to taste.
  7. Remove from heat and ladle the porridge into bowls. Top with chopped spring onions and cilantro.
  8. Serve hot with lime wedges on the side for squeezing over the porridge.
