- Duck breast - 200 grams
- Jasmine rice - 100 grams
- Chicken or duck broth - 800 milliliters
- Ginger - 1 tablespoon, minced
- Garlic - 1 clove, minced
- Shallots - 2, finely chopped
- Fish sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spring onions - 2, chopped
- Cilantro - a handful, chopped
- Lime - 1, cut into wedges
- Chili pepper - 1, sliced (optional)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
- In a pot, heat a splash of oil over medium heat and sauté the shallots, ginger, and garlic until fragrant.
- Add the duck breast to the pot, searing it on both sides for about 3-4 minutes until browned.
- Pour in the broth and bring to a simmer, then add the rinsed rice, salt, and black pepper.
- Reduce the heat to low, cover, and cook for about 25-30 minutes, stirring occasionally until the rice is soft and the porridge has thickened.
- Remove the duck breast, shred it into pieces, and return it to the pot.
- Stir in the fish sauce and taste for seasoning, adjusting as necessary.
- Serve the cháo ngan hot, garnished with chopped spring onions, cilantro, and lime wedges on the side. Add sliced chili for extra heat if desired.
