Ingredients

  • Duck breast - 200 grams
  • Jasmine rice - 100 grams
  • Chicken or duck broth - 800 milliliters
  • Ginger - 1 tablespoon, minced
  • Garlic - 1 clove, minced
  • Shallots - 2, finely chopped
  • Fish sauce - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spring onions - 2, chopped
  • Cilantro - a handful, chopped
  • Lime - 1, cut into wedges
  • Chili pepper - 1, sliced (optional)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
  2. In a pot, heat a splash of oil over medium heat and sauté the shallots, ginger, and garlic until fragrant.
  3. Add the duck breast to the pot, searing it on both sides for about 3-4 minutes until browned.
  4. Pour in the broth and bring to a simmer, then add the rinsed rice, salt, and black pepper.
  5. Reduce the heat to low, cover, and cook for about 25-30 minutes, stirring occasionally until the rice is soft and the porridge has thickened.
  6. Remove the duck breast, shred it into pieces, and return it to the pot.
  7. Stir in the fish sauce and taste for seasoning, adjusting as necessary.
  8. Serve the cháo ngan hot, garnished with chopped spring onions, cilantro, and lime wedges on the side. Add sliced chili for extra heat if desired.
