Ingredients

  • Pork belly - 150 grams
  • Pork intestines - 100 grams
  • Pork liver - 100 grams
  • Chicken broth - 500 ml
  • Coconut milk - 100 ml
  • Shiitake mushrooms - 50 grams, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, sliced
  • Fish sauce - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste

Steps

  1. Clean the pork intestines thoroughly and boil them in water for 10 minutes. Drain and set aside.
  2. In a pot, heat 1 tablespoon of oil over medium heat and sauté the minced garlic and ginger until fragrant.
  3. Add the pork belly, cooked intestines, and liver to the pot, stirring to coat with the garlic and ginger mixture.
  4. Pour in the chicken broth and bring to a gentle simmer. Cook for about 20 minutes until the meats are tender.
  5. Remove the pork liver, slice it thinly, and return it to the pot. Add the shiitake mushrooms, coconut milk, fish sauce, and black pepper. Simmer for an additional 5 minutes.
  6. Taste and adjust seasoning with salt if necessary.
  7. Serve hot, garnished with chopped green onions and cilantro, and lime wedges on the side.
