Ingredients
- Pork belly - 150 grams
- Pork intestines - 100 grams
- Pork liver - 100 grams
- Chicken broth - 500 ml
- Coconut milk - 100 ml
- Shiitake mushrooms - 50 grams, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 inch, sliced
- Fish sauce - 1 tablespoon
- Black pepper - 1 teaspoon
- Green onions - 2 stalks, chopped
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Salt - to taste
Steps
- Clean the pork intestines thoroughly and boil them in water for 10 minutes. Drain and set aside.
- In a pot, heat 1 tablespoon of oil over medium heat and sauté the minced garlic and ginger until fragrant.
- Add the pork belly, cooked intestines, and liver to the pot, stirring to coat with the garlic and ginger mixture.
- Pour in the chicken broth and bring to a gentle simmer. Cook for about 20 minutes until the meats are tender.
- Remove the pork liver, slice it thinly, and return it to the pot. Add the shiitake mushrooms, coconut milk, fish sauce, and black pepper. Simmer for an additional 5 minutes.
- Taste and adjust seasoning with salt if necessary.
- Serve hot, garnished with chopped green onions and cilantro, and lime wedges on the side.
