Ingredients
- Jasmine rice - 100 grams
- Pork belly - 100 grams, diced
- Pig intestines - 100 grams, cleaned
- Pork blood pudding (huyết) - 50 grams, sliced
- Water - 1 liter
- Chicken broth - 500 ml
- Ginger - 1 thumb-sized piece, sliced
- Garlic - 2 cloves, minced
- Shallots - 2, finely chopped
- Spring onions - 2, chopped
- Cilantro - a handful, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fish sauce - 1 tablespoon
- Lime - 1, cut into wedges
- Chili pepper - to taste, sliced
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, add the 1 liter of water, pork belly, and cleaned pig intestines. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Remove the pork belly and intestines from the pot, and set aside. Strain the broth to remove any impurities.
- In the same pot, add the soaked rice, ginger, garlic, and the strained broth. Cook on medium heat for about 20 minutes, stirring occasionally until the rice is soft and the mixture thickens.
- Meanwhile, in a separate pan, sauté the shallots in a bit of oil until golden brown. Add the diced pork belly and cook until browned. Add the sliced blood pudding and cook for another 5 minutes. Season with salt, black pepper, and fish sauce.
- Once the rice porridge is thick and creamy, slice the cooked pig intestines and add them along with the sautéed pork and blood pudding to the pot. Mix well and adjust seasoning if necessary.
- Serve hot, garnished with chopped spring onions, cilantro, and slices of chili pepper. Offer lime wedges on the side for squeezing over the top.
