Ingredients

  • Chicken breast - 200 grams
  • Cauliflower rice - 200 grams
  • Chicken broth - 500 ml
  • Coconut milk - 100 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Fish sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a pot, bring the chicken broth to a simmer over medium heat.
  2. Add the chicken breast to the pot and cook for about 15 minutes until fully cooked.
  3. Remove the chicken, shred it using two forks, and set aside.
  4. In the same pot, add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  5. Stir in the cauliflower rice and coconut milk, cooking for an additional 5-7 minutes until heated through.
  6. Add the shredded chicken back into the pot, then season with fish sauce, salt, and black pepper to taste.
  7. Serve hot, garnished with chopped green onions and fresh cilantro.
