- Fish sauce - 1 tablespoon

Steps
- In a pot, bring the chicken broth to a simmer over medium heat.
- Add the chicken breast to the pot and cook for about 15 minutes until fully cooked.
- Remove the chicken, shred it using two forks, and set aside.
- In the same pot, add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Stir in the cauliflower rice and coconut milk, cooking for an additional 5-7 minutes until heated through.
- Add the shredded chicken back into the pot, then season with fish sauce, salt, and black pepper to taste.
