Ingredients

  • Jasmine rice - 100 grams
  • Water - 1 liter
  • Vegetable broth - 500 ml
  • Shiitake mushrooms - 50 grams, sliced
  • King oyster mushrooms - 50 grams, diced
  • Tofu - 100 grams, cubed
  • Carrot - 1 medium, diced
  • Corn - 50 grams (fresh or frozen)
  • Seaweed (nori or wakame) - 10 grams, shredded
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Black pepper - to taste
  • Lime - 1, cut into wedges

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
  2. In a large pot, add 1 liter of water and 500 ml of vegetable broth. Bring to a boil.
  3. Once boiling, add the rinsed jasmine rice to the pot. Reduce heat to a simmer and cook for 25-30 minutes, stirring occasionally, until the rice is soft and has thickened to a porridge-like consistency.
  4. In a separate pan, heat sesame oil over medium heat. Add garlic and ginger, sautéing until fragrant.
  5. Add the sliced shiitake and diced king oyster mushrooms to the pan and cook for about 5 minutes until softened.
  6. Stir in the diced carrot and corn, cooking for an additional 3-4 minutes.
  7. Add the cooked mushroom and vegetable mixture to the rice porridge, along with the cubed tofu and shredded seaweed. Stir well to combine.
  8. Season the congee with soy sauce, black pepper, and half of the chopped green onions. Cook for another 5 minutes to heat through.
  9. Serve the Cháo Hải Sản Chay in bowls, garnished with the remaining green onions and lime wedges on the side.
