- Jasmine rice - 100 grams
- Water - 1 liter
- Vegetable broth - 500 ml
- Shiitake mushrooms - 50 grams, sliced
- King oyster mushrooms - 50 grams, diced
- Tofu - 100 grams, cubed
- Carrot - 1 medium, diced
- Corn - 50 grams (fresh or frozen)
- Seaweed (nori or wakame) - 10 grams, shredded
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Black pepper - to taste
- Lime - 1, cut into wedges
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
- In a large pot, add 1 liter of water and 500 ml of vegetable broth. Bring to a boil.
- Once boiling, add the rinsed jasmine rice to the pot. Reduce heat to a simmer and cook for 25-30 minutes, stirring occasionally, until the rice is soft and has thickened to a porridge-like consistency.
- In a separate pan, heat sesame oil over medium heat. Add garlic and ginger, sautéing until fragrant.
- Add the sliced shiitake and diced king oyster mushrooms to the pan and cook for about 5 minutes until softened.
- Stir in the diced carrot and corn, cooking for an additional 3-4 minutes.
- Add the cooked mushroom and vegetable mixture to the rice porridge, along with the cubed tofu and shredded seaweed. Stir well to combine.
- Season the congee with soy sauce, black pepper, and half of the chopped green onions. Cook for another 5 minutes to heat through.
- Serve the Cháo Hải Sản Chay in bowls, garnished with the remaining green onions and lime wedges on the side.
