Ingredients
- Jasmine rice - 100 grams
- Water - 1 liter
- Salt - 1 teaspoon
- Fish sauce (kosher) - 1 tablespoon
- Shrimp (peeled and deveined) - 100 grams
- Calamari (cleaned and sliced) - 100 grams
- Scallops - 100 grams
- Ginger (sliced) - 10 grams
- Green onions (chopped) - 2 tablespoons
- Cilantro (chopped) - 2 tablespoons
- Lime wedges - 2 pieces
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear. This helps remove excess starch.
- In a large pot, combine the rinsed rice, water, and salt. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and let the rice simmer for about 20 minutes, stirring occasionally, until the rice is very soft and has absorbed most of the water.
- Add the ginger slices, fish sauce, shrimp, calamari, and scallops to the pot. Stir well and continue to simmer for another 5-7 minutes, until the seafood is cooked through.
- Remove from heat and stir in half of the chopped green onions and cilantro.
- Serve the porridge hot, garnished with the remaining green onions, cilantro, and a squeeze of lime juice. Add black pepper to taste.
