Ingredients

  • Jasmine rice - 100 grams
  • Chicken breast - 200 grams
  • Water - 1 liter
  • Ginger - 10 grams, sliced
  • Garlic - 2 cloves, minced
  • Shallots - 2, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Spring onions - 2, chopped
  • Coriander leaves - a handful, chopped
  • Lime - 1, cut into wedges
  • Soy sauce - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, combine 1 liter of water, chicken breast, ginger, garlic, and shallots. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat and simmer for 20 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot and set it aside to cool. Strain the broth to remove the ginger, garlic, and shallots.
  5. Add the soaked rice to the strained broth and bring to a boil again. Reduce heat and simmer for about 15-20 minutes, stirring occasionally, until the rice is soft and the porridge reaches your desired consistency.
  6. While the porridge is cooking, shred the cooled chicken into bite-sized pieces.
  7. Once the porridge is ready, season it with salt and black pepper. Stir in the shredded chicken.
  8. Serve the Cháo Gà hot, garnished with chopped spring onions, coriander leaves, and a wedge of lime on the side. Drizzle soy sauce on top for added flavor.
