Ingredients
- Jasmine rice - 100 grams
- Chicken breast - 200 grams
- Water - 1 liter
- Ginger - 10 grams, sliced
- Garlic - 2 cloves, minced
- Shallots - 2, diced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Spring onions - 2, chopped
- Coriander leaves - a handful, chopped
- Lime - 1, cut into wedges
- Soy sauce - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, combine 1 liter of water, chicken breast, ginger, garlic, and shallots. Bring to a boil over medium heat.
- Once boiling, reduce the heat and simmer for 20 minutes until the chicken is cooked through.
- Remove the chicken from the pot and set it aside to cool. Strain the broth to remove the ginger, garlic, and shallots.
- Add the soaked rice to the strained broth and bring to a boil again. Reduce heat and simmer for about 15-20 minutes, stirring occasionally, until the rice is soft and the porridge reaches your desired consistency.
- While the porridge is cooking, shred the cooled chicken into bite-sized pieces.
- Once the porridge is ready, season it with salt and black pepper. Stir in the shredded chicken.
- Serve the Cháo Gà hot, garnished with chopped spring onions, coriander leaves, and a wedge of lime on the side. Drizzle soy sauce on top for added flavor.
